A History of Tequila
A common misunderstanding is that tequila is made from a cactus. The reality is that tequila is made from distilled sap from hearts of the agave plant. The key to quality tequila is to harvest agaves when they are perfectly ripe which can take up to an astounding 8 to 12 years. In order for it to be labeled a tequila, the product must be produced in a specific area designated in Mexico around the town of Tequila. The word tequila itself is a mystery. It is said to be an ancient Nahuati term. The Nahuati were the original people that lived in the area and the translation is "the place of harvesting plants". In recent years, many have put away the salt shakers and sliced limes. They sit down, relax and savor the taste of liquid fire.
